Now I get to ask Meredith questions about the time we spent in the kitchen making this grown up grilled cheese. She gives the answers. Sometimes, we laugh. Sometimes, you laugh. Everyone wins.
What would you rate this recipe?
An eight out of ten. The bread isn’t my absolute favorite. But, like the cheese is good. The bread is soft. And it’s fancy bread. But, it’s not super fancy, I guess. Yeah.
How would you describe the flavors and experience of eating this dish with someone who has never tasted it before?
It is soft and chewy and the cooked cheese bits were crunchy, and then the bread and cheese were soft.

What part of making this dish did you enjoy the most, and why?
Um, eating it.
Did you feel like you learned anything while making it?
Nothing, really. But, I did learn that you can put water in the pan and then cover it with a lid. That helps the cheese to melt.
If we made it again, what would you want to do differently next time?
I would want to try different kinds of bread and cheese. That’s the plan, alright.
Dad’s Notes
We’ve been making grilled cheese sandwiches for a long time. There was a season a few years ago where grilled sandwiches were what we ate for dinner and for dessert. I was weak, ok? And, to be fair, they still ask for Nutella and marshmallow fluff sandwiches.
I like to make grilled cheese sandwiches with freshly shredded cheese because I like the way it melts so much faster and smoother.
But, that said, I have to admit you get a better cheese pull with pre-shredded cheese. The above shot took us a few attempts, and it’s far and away the best we got with freshly shredded cheese.
Also, I’m just going to say it. Super soft bakery breads are a dream for grilled cheese. So, if you’ve never sliced an Italian loaf, consider this your moment to fix that.
This is our favorite sandwich to pair with a bowl of creamy roasted tomato and garlic soup.

Method
- Set a large skillet on the stove over medium heat. Butter the outer sides of the bread while the pan heats up.
- Set the bread in the center of the pan, buttered side down. Move them about a bit to ensure the bottoms are evenly coated with butter. Then, top each slice with half the cheese.
- Add a tbsp of water to the edge of skillet, then cover for about a minute. The water will steam to help melt the cheese faster.
- Once the cheese has melted a bit, carefully flip one slice onto the other. Cover again for about a minute, then flip again. Continue flipping until the sandwich is finished cooking.
