Brownies with Cream Cheese Frosting

This is the place where I get to ask Meredith some questions about making these brownies with cream cheese frosting. She will give the answers. Sometimes, we laugh. Sometimes, you laugh. So, really, everyone wins.

What was your favorite part about making this recipe?

Making the icing and using the hand mixer. I got to use the hand mixer all by myself. I never got to do that before. It kind of felt like I was all grown up because I was able to do it.

How would you describe how it tastes, in your own words?

Sweet. Um, cream cheesy. The frosting is a little bit tangy. Chocolatey. It’s creamy because of the frosting, and it’s like chunky because of the chocolate chips on top. I think that’s really it. 

Would you want to make it again? Why or why not?

Yeah. I like the way they taste. It was pretty easy to make. I measured out the ingredients, and then mixed it all together with a whisk. I like using the whisk. My dad put them in a pan and then I got to put most of the chocolate chips on top. While they were in the oven, we made the icing.

Did you learn something new while we cooked?

How to use a hand mixer. Don’t plug it in before you put the sticks into it. My dad told me that it could hurt your hand really bad if you turn it on by accident.

If you could change one thing about the recipe, what would you do differently?

Nothing really. They’re really good. These are a 10 out of 10, for me.

Dad’s Notes

This was a really fun recipe to make with Meredith. She measured everything and whisked it all together. I only had to help a little with the hand mixer. Total proud dad moment.

The only thing that I would change is to save some of the frosting for something else. I prefer less icing, when it comes to frosted brownies. That said, Meredith absolutely disagreed with me. So, maybe I’m weird.

This recipe started as the incredible lunch lady brownies. We followed that recipe exactly, until we added chocolate chips on a whim. I mean, double chocolate? Why not?

Well, if you’re going to refrigerate your brownies, just know that the layer on top becomes pretty crunchy when chilled. So, if you want them soft and chewy, skip that step.

These brownies are really rich. So, I’d err on the side of cutting them into smaller squares. Then, you can come back for more!

Ingredients
  

  • 1 cup butter (melted)
  • ½ cup cocoa powder (unsweetened)
  • 1 cup light brown sugar
  • 1 cup sugar
  • 4 eggs
  • 1 tbsp vanilla extract
  • 2 cups flour
  • 3/4 cup chocolate chips
Frosting
  • ½ cup butter (room temperature)
  • 8 oz cream cheese (room temperature)
  • 3 cups powdered sugar

Method
 

  1. Preheat the oven to 350°F. Grease a 9×13 baking dish. Whisk together the butter, cocoa, brown sugar, and white sugar in a mixing bowl. Then, add the eggs and vanilla. Whisk again until smooth. Then, add the flour and stir until combined.
  2. Pour into the prepared dish and spread the thick batter evenly to the corners. Scatter chocolate chips across the top. Then, bake for 22-24 minutes, until a toothpick comes out with moist crumbs. Let cool completely before frosting.
Frosting
  1. Using a hand mixer or stand mixer, combine the butter and cream cheese. Then, add the powdered sugar to the mix in portions until desired sweetness is reached.
  2. Top the brownies with the frosting. Serve immediately.
