Tortilla Pizzas

One of the most dangerous snacks I've ever learned to make. Tortilla Pizzas are quick and easy, super versatile, and absolutely delicious.

Ingredients
  

  • 1/2 tbsp butter
  • 1 tortilla
  • 1 tbsp pizza sauce
  • 1/3 cup mozzarella cheese (shredded)
  • 7 pepperoni slices

Method
 

  1. Start your oven broiler. Then, set an oven safe pan on the stove over medium heat. Add butter to the pan, and then swirl the tortilla over it to thoroughly coat the bottom. Flip the tortilla, and repeat this process to butter top and bottom.
  2. Spread out the sauce across the top of the tortilla, even a thin coat over the edges. Sprinkle with shredded cheese. Then, lay out the pepperonis.
  3. Using a spatula, lift up the edge of your tortilla and check how crispy the bottom is getting. Depending on how fast you are at topping the pizza, this may take 1-2 minutes to reach the desired golden brown.
  4. Transfer the pan to the broiler and set a timer for 25 seconds. Remove from the oven, and carefully transfer to cutting board to slice.

Notes

The first tortilla takes 30 seconds or so in the broiler, for me. But, as I make more and the oven reaches higher temps, I reduce the timer to 25 and then 20 seconds.
