Ingredients
  

  • 1 lb ground beef
  • 12 oz bacon
  • 29 oz pinto beans (2 cans)
  • 29 oz black beans (2 cans)
  • 14.5 oz red kidney beans (1 can)
  • 7 oz green chile (1 can)
  • 14.5 oz diced tomatoes (1 can)
  • 3 cups beef broth
  • 3 tbsp chili powder
  • 2 tsp paprika
  • 2 tsp cumin
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp cayenne pepper
  • 1 tsp corn starch (as needed)

Method
 

  1. Set a large pot over medium high heat. While it heats up, cut the bacon into ¼ inch wide strips. Then, cook the bacon. While the bacon cooks, measure the spices into a small bowl and mix.
  2. Drain all but 1 tablespoon of the bacon grease and set the bacon aside. Cook and crumble the ground beef in the same pot. Add the spice mix about halfway through. When finished, add the bacon back into the pot.
  3. Strain and rinse the beans. Then, add them to the pot with the tomatoes, green chiles, and beef broth. Bring to a boil on high heat.
  4. When the pot reaches a boil, reduce to low heat and maintain a slow simmer for 30 minutes before serving. Serve with your favorite toppings!
